Summer is winding down and we are so sad to see it go but while the days are warm we will be making every effort to celebrate. These popsicles are so festive and the perfect end to a lazy afternoon lunch or a poolside snack. They are really quick to make but may take some time to set so we recommend whipping up a batch a day before. I would say this is perfect for leftover wine but we all know there are no leftovers at our place 🙂
Ingredients (Makes 6 popsicles):
1.5 Cup Wine
1 Cup Water
1.5 Cups Berries (We used Blueberries, Blackberries, Strawberries and Raspberries)
1 Tbsp Sugar
In a large mixing bowl, combine water and sugar. Stir until sugar is dissolved and then add wine. Dice up the berries, separate into two equal batches. Smash the one batch using a wooden spoon and stir into the wine mixture. Spoon in the other batch of diced berries into the Popsicle molds. Using a ladle, pour into the mixture into popsicle molds. Using a spoon, stir the mixture to make sure the berries are evenly distributed. Set in a freezer till solid.
You can also pour the mixture into wide mouth bottles and when partially frozen stir with a fork to make a slushy.
